How to store mushrooms
Mushrooms have unique characteristics that require special care and attention in order to maintain their freshness for as long as possible. When you learn how to use your refrigerator to keep mushrooms fresh, you can keep them on hand and ready for your family’s favorite recipes.
Use this guide to learn more about mushrooms and how to store them in the refrigerator and freezer to help them stay fresh.
What are mushrooms?
Mushrooms are a type of fungi that typically grow in damp, dark environments. There are several species of edible mushrooms, including button, portobello, shiitake and oyster mushrooms. These fungi are best stored in the refrigerator, where they typically can stay fresh for up to a week when stored properly.
How to store mushrooms in your refrigerator
When stored incorrectly, the moisture released from the mushrooms may create a slimy texture on their surface. You can prevent slime by storing mushrooms in the refrigerator in a paper bag using the right technique. Read on below to learn how to store mushrooms in the fridge.
What you’ll need
Paper bag
Paper towels
Brush or paper towel to clean mushrooms
Kitchen knife to de-stem (optional)
Step 1. Clean and prep mushrooms for storage
Start by gently brushing any dirt off the mushrooms with a soft brush or damp towel. Do not wash mushrooms unless you plan on using them immediately, as they will absorb water and become slimy. Depending on the type of mushroom you are storing, you may want to remove the fibrous stems before storing in the fridge.
Step 2. Cover mushrooms in paper towels
Place mushrooms in a single layer on a sheet of paper towel. Then, use another layer of paper towels to place on top. If you are storing multiple varieties of mushrooms in one container, keep each variety separate in its own layer of paper towels.
Step 3. Place paper towel-covered mushrooms in a paper bag
Fold the top of the paper bag over to enclose the mushrooms completely and prevent them from drying out. Place the paper bag in your refrigerator and store at 32–40°F on a low humidity setting for up to one week. It is not recommended to store mushrooms in the refrigerator door as this is typically the warmest location in your fridge.
How to freeze mushrooms?
Though you can store raw mushrooms in the freezer, their high water content can create an unpleasant texture when thawed. If you plan on storing your mushrooms in the freezer to extend their shelf-life, it is recommended that you cook them first.
Learn how to store mushrooms in your freezer with the following instructions.
What you’ll need
Plastic bag or airtight container
Brush or paper towel to clean mushrooms
Kitchen knife to de-stem (optional)
Step 1. Clean and prep mushrooms
Before you cook and freeze your mushrooms, be sure to give them a good clean. If you plan to pan-fry your mushrooms, simply use a brush or dry paper towel to rub them down. Only rinse mushrooms that you plan to use in a soup.
Step 2. Cook your mushrooms
Mushrooms can be cooked in a variety of ways, including sautéing, grilling, roasting and frying. Once you have selected your cooking method, cook the mushrooms until they are tender to draw out excess moisture and concentrate the flavors.
Step 3. Let the mushrooms cool
Let the cooked mushrooms cool to room temperature before freezing to prevent them from becoming mushy.
Step 4. Freeze in an airtight container
Once cooled, mushrooms can be frozen in a freezer-safe plastic bag or airtight container. You won’t have to thaw frozen mushrooms when you decide to use them, simply add them in while cooking your desired recipe.
Best refrigerator settings for storing mushrooms
The ideal refrigerator temperature for mushrooms is between 32-40°F, depending on the type. If your refrigerator offers a humidity control feature, make sure it is set to a lower setting as picked mushrooms thrive in drier environments. Avoid storing mushrooms in the fridge door, as this is typically the warmest spot in the fridge.
Select Whirlpool® refrigerators offer features like an exterior drawer that provides additional refrigeration space and allows you to adjust temperature controls based on what food you’re storing.
Tips for mushroom storage
You can keep your mushrooms tasting fresh with these additional storage tips:
Avoid storing mushrooms in the crisper drawer, as the high humidity could cause them to spoil quickly.
Do not rinse mushrooms until you are ready to use them, as they will absorb water and become slimy.
Replace the paper towel in the paper bag every few days to prevent slime from forming.
Store different varieties of mushrooms separately to prevent flavor transfer.
Avoid storing mushrooms near aromatic foods in your fridge as they can absorb scents and flavors.
